Peace be Upon You! Today we're making Schezwan Tandoori Start by
grinding some whole spices Kashmiri Chillies gives good
color to the recipe And they're not too spicy Grind the spices into a
fine powder You can also roast the spices lightly before grinding
Let's add more ingredients to the spice powder Curd should be dry
Place curd in a strainer to make it dry .
You
can use any type of oil Mix everything well You can also use red
tandoori food color Our spice mixture is ready we will apply it on
chicken make cuts on the chicken leg pieces Wash & dry
chicken properly Chicken shouldn't be wet or have any water
Apply
the spice mixture on the chicken Fill in mixture properly inside the
cuts rub the mixture lightly on chicken this will ensure spices
blend with chicken & enhance it's taste Use the leftover spice
mixture in schezwan sauce save it aside Set aside the chicken in fridge
Let it marinate for 3-4 hours you can leave it overnight The longer the
chicken is marinated, the more it turns good If you're short on time
marinate for at least 2 hours let's grill them we're not cooking
chicken in oven or griller we will make it in a pan This is for our
viewers who don't have an oven or griller Heat up the pan You can
also use oil use about 1 tbsp of oil Add chicken pieces after the butter
melts Cover with lid Cook on high flame for 5 minutes .
Adjust to low flame Flip the chicken pieces carefully Cook another
side for 5 minutes Rise the flame again Let's check the chicken Turn
to low flame Cover with lid Cook on low flame for 8-10 minutes We're
cooking it again so that the chicken gets tender Till the chicken get's
cooked let's prepare some sauces Boil for 10 minutes Then grind into
a fine paste .
You can also use black
pepper powder mix them well come back to the chicken We've
cooked one side of chicken for 8-10 minutes Flipped them And cooked
another side for 8-10 minutes In total, we've cooked chicken for 20
minutes on both sides Turn the flame high Dry out the spice mixture
Turn off the flame Give a smoky flavor to the chicken Place a small
bowl or cup in the middle of pan Add hot coal in the cup Pour some
butter over it Cover the lid Let it rest for 5-6 minutes .
Take a grill basket Grease with some oil Roast all the pieces in same
way Heat up oil in a pan Cook garlic on low flame for about a
minute Let the color of garlic & ginger change to light
golden Add the sauces prepared let the flame be on low Add the
leftover spice mixture too that we saved earlier .
Add about 100 ml of water Turn the flame on high Sizzle all the
things properly for 2 minutes Get a thick consistency to coat it
on chicken leg pieces Keep on low flame & add chicken Flip
the pieces coat the sauce well on chicken pieces Sizzle again on high
flame Chicken is ready with well-coated sauce Switch off the flame
Garnish with spring onions to serve
