What is Vapa Sandesh


Vapa Sandesh is a Bengali (India, West Bengal)delicacy which is a dessert. Vapa means steamed and Sandesh is dessert (Typically made with condensed milk or curd which is commonly known as Chena or chana).

Vapa Sandesh or Bengali  Steamed Cheese cake is very famous throughout the world special  among the Indians.

Taste 

This Cheese cake is very soft and mouth melting if a genuine recipe is followed. It is very lightly sweetened with sugar(few uses jaggery) which increases the acceptance.
Mostly foodies  ask for an another  portion for a fulfilling satisfaction. 

I would highly recommend  the dessert to you if you have not tried yet and if you already  tried it then you don't need my recommendation. 

Ingredients
Milk -1.5lt

Vinegar -4tbsp

Sugar-4tbsp

Cornflour-1tbsp

Baking powder -1tsp

Cardamom powder-1/2 tsp

Rose water- 3tsp

Milk powder - 2tbsp

Chopped nuts and saffron for garnishing..

Method in detail
1. Boil milk   


2. Dilute vinegar with equal amounts of water



3. Gradually add vinegar water and curdle the milk.



4.Strain the curd.



5.Cool it down with ice cold water.



6. Hang the curd to strain excess water. 



7. Blend (curd + sugar + cornflour + baking powder + cardamom powder + rosewater + milk powder+ghee) into a very smooth paste and whip for 2 minutes  for better result.



8. Grease the bowl  (in what you want to make the Sandesh) with ghee.



9. Pour the mixture  and cover the container.
Put in the steamer. 


10.Garnish with chopped dry fruits and saffron. 
                                                 

11. Cover the steamer for 25-30 mins.


12.Take out and cool the container in a refrigerator  for 1 hour.


13. When it is cold take it out and cut according to your choice. Serve cold.
